A light baked Spanish cheesecake topped with Lemon curd. All our cakes are hand baked from scratch in small batches. For maximum flavour and a soft, moist texture we recommend removing the cakes 20 to 30 minutes in advance from the fridge (subject to room temperature). If your cheesecake still appears hard, this means that it hasn't reached normal room temperature, so just leave it out for a little longer.
